Very important in the first few events of the academic year is our traditional Flammkuchenstand. Flammkuchen comes from Elsaß (border Germany/France) and has been eaten on earth as long as pizza. But if you say pizza to a Flammkuchen, you are looking for trouble. Yes, the dough is similar, but without HEFE/GERM so it stays flat. And the classical topping is sour cream, onions and bacon (just little cubes, no stripes!) - it just tastes like heaven. If you want to try, here you go, and don't forget to write us that you liked it (there is no other possibility) ;-)
### Dough:
1 kg flour (this recipe is optimized for universal wheat flour)
415 ml water
160 ml olive oil
3 pinches of salt
Just throw everything in a bowl and start kneading. Roll the dough to a thin ellipse (stays approx. the same size and shape after baking process) and go on with the topping:
### Topping before baking:
sour cream (just a thin layer)
bacon cubes
onion rings
Put in the oven at 230° C for about 10 Minutes.
### Topping after baking:
chopped chives
a pinch of pepper
